EASY Stuffed Mini Peppers

This is one of my most requested recipes. I posted a version on Cinco De Mayo, but this recipe is way easier, and DELICIOUS! Leave out the sour cream and cheese if you are dairy free. 

Ingredients:

  • 1 lb of ground lean turkey
  • 8-10 mini peppers
  • taco seasoning
  • sour cream
  • lime juice
  • chilie lime seasoning (I use Trader Joes)
  • fresh cilantro

Directions:

  1. Set oven to 350.
  2. Wash peppers and halve them.
  3. Spray peppers with olive oil, and season with salt, pepper, and chilie lime seasoning.
  4. Bake for 5 minutes.
  5. Meanwhile, brown the ground turkey, drain, and add taco seasoning with a little water.
  6. Set to the side.
  7. Create your sour cream mixture. This should be made to your liking as far as measurements go. I use about 2-3 table spoons of sour cream, add in a good bit of lime juice so that it’s a little soupy, sprinkle in chilie lime seasoning to taste, and adjust from there. Add in cilantro.
  8. Add the meat to your sour cream mixture.
  9. Top each pepper with the meat and sprinkle cheese on top!
  10. Bake for 5-10 minutes depending on how crunchy that you like your peppers!

Another great option is to make a salad instead. I use lettuce as my base, add meat (without sour cream). Add in black beans for extra protein and carbs, corn, salsa, and guacamole. My corn is frozen Mexican Street Corn. It’s so easy to heat up. Use the baked mini peppers as dippers for salsa!!! So many options. Keep your meals fun!
