Hearts of palm pasta

  • Fall calls for comfort food. Scrolling through Instagram makes me hungry. The posts consist of hearty meals, and pumpkin loaves! It all looks delicious, but also overwhelming. The ingredients lists are long, and there are far too many steps for me. 

I’m a busy mom. I need quick and easy. I also like to EAT, so I’m here for the good food. I came across these hearts of palm pasta noodles in Publix with a friend of mine. We both bought them and had no idea what to do with them. Thank you Instagram… I came across a few posts, and VOILA I had enough inspiration to create a yummy dish with them. May I add that this takes maybe 10 minutes to create. 

  • Ingredients:
  • Palmini Pasta (I usually eat 1/2 of the can, sometimes more)
  • Grape tomatoes
  • 5 asparagus spearsĀ 
  • chopped onion (optional)
  • Primal Kitchen Alfredo Sauce (found at Publix, can also order online)
  • Tyson ready to eat chicken


  • boil pasta for 5-10 minutes ( will soften some)
  • cook asparagus, tomatoes, and onion
  • warm sauce
  • heat chicken
  • mix all ingredients in a bowl
