Mediterranean Lemon Herb Summer Salad

Ingredients:

Dressing/ Marinade (I doubled this recipe… and then some) 

  • 2 tbsp olive oil
  • juice of one 1 lemon
  • 2 tbsp water 
  • 2 tbsp red wine vinegar
  • parsley
  • dried basil
  • minced garlic 
  • dried oregano
  • salt & pepper to taste

Mediterranean Salad (can be kept in fridge and used for salads OR used to top grilled chicken)

  • 1 large cucumber 
  • diced roma tomatoes 
  • red onion
  • avocado
  • Kalamata olives or Black olives 
  • lemon wedge to serve
  • crumbled feta

Instructions:

  1. Mix dressing ingredients 
  2. Marinade chicken for 30 minutes (or up to two hours)
  3. Grill chicken
  4. Mix salad ingredients in a bowl and toss with dressing. 
  5. Serve with lemon wedges. 

Macro Suggestions: for Low Carb Day, use salmon instead of chicken. Add sunflower seeds and extra avocado to up fat even more
