Taco Skillet Bake


  • ground beef/turkey/ or shredded chicken
  • bell peppers & onion
  • drained canned corn
  • 90 second Spanish rice
  • rotel
  • beef or chicken broth
  • taco seasoning
  • mexican cheese
  • optional drained/ rinsed black beans


  1. Prep protein with taco seasoning add broth for flavor
  2. Sauté veggies in garlic and oil
  3. Add corn, beans, and rotel into the skillet
  4. Stir in 90 second rice
  5. Simmer until liquid has reduced
  6. Turn down heat and top with cheese
  7. Cover and turn heat off

*Garnish with avocado, jalapeño, and sour cream. 

**Need to double the recipe? Throw this in a casserole dish, add a little sour cream/ cheese, and bake it!
