Cookie Dough Bars

INGREDIENTS

  • 2 cups raw cashews (soaked)
  • 1 cup Medjool dates (pitted)
  • 1/4 cup coconut flour
  • 1 cup mini chocolate chips (optional)
  • A pinch of sea salt

INSTRUCTIONS

  1. Soak raw cashews in hot water for 2 hours. (Or overnight) Drain and rinse.
  2. In a food processor, pulse together cashews and pitted Medjool dates and a pinch sea salt. Blend until smooth and doughy. (It should appear to be a bit wet and sticky)
  3. Blend in coconut flour. usually needs about 1/4 cup (add additional 2-3 tbsp if the batter still seem to be runny).
  4. Next, fold in mini chocolate chips.
  5. Lastly, press the no bake cookie dough into a parchment paper-lined 8×4 pan and freeze for 3-4 hours or overnight. 
  6. Cut into bite-sized pieces. Enjoy!
