Greek Chicken Kabobs

INGREDIENTS:

  • 4 chicken breast, cut into cubes
  • 1/3 cup olive oil
  • 2 tablespoons greek seasoning 
  • zest from 1 lemon
  • kosher salt to taste

INSTRUCTIONS:

  1. In a large bowl, combine the cut up chicken breast, olive oil, greek seasoning and lemon zest. Toss to combine. Marinate for at least 15 minutes, or up to 3 days. (I recommend marinating ahead of time to save you on busy nights) 
  2. Heat your grill (or cast iron skillet if you don’t have a grill) over high heat.
  3. Thread the chicken onto skewers.
  4. When the grill is hot, cook the skewers about 8 minutes per side, until the chicken has an internal temperature of 165ºF.

TZATZIKI SAUCE (if not using store bought)

  • 1–1/2 cup greek yogurt (I used sour cream bc that’s all that I had)
  • 1 english cucumber
  • 2 tablespoons dill (I used dried)
  • 1 clove of minced garlic
  • juice from half a lemon (or more to taste)
  • 1/2 teaspoon kosher salt (or more to taste)

Serve these Kabobs and TZATZIKI Sauce with sides of choice. 
– grilled veggies
– rice
– Greek spinach rice 
– cauliflower rice
– sliced tomatoes
