One Pan Greek Chicken


  • chicken thighs
  • marinated artichokes
  • olives
  • baby tomatoes
  • lemon slices
  • 1/4 cup lemon juice
  • 2 tbsp avocado oil
    (Add as many of those additions as you’d like, and feel free to substitute the olives for capers)


  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 3 cloves garlic, smashed


  1. Pre heat oven to 425 
  2. Heat skillet over medium heat and add oil. 
  3. Pat chicken dry, and season the skin with coarse salt. Sear skin side down, and season the backside with the other seasonings. 
  4. 7-10 minutes later, flip the chicken over. Add lemon slices, artichokes, olives, garlic, and baby tomatoes. 
  5. Place the skillet into the oven and let the chicken cook for 25-30 minutes or until the chicken is cooked through.
  6. Serve over Pasta of choice.
